If it's just a matter of recording yourself you could use the sound recorder accesary. This doesn't have a wide variety of opions but if your using a desktop mic you probably aren't aiming for a professional quality recording anyway.

Just record 30 seconds of no sound and decrease the speed a couple times [Effects Menu]and presto you have 6 minutes of recording time. I just save this blank sound file as a template and reuse it over and over again just using the save as menu option to rename the file once I have recorded.

Can you get a decent mic that works with Sound Recorder or Cool Edit Pro that doesn't require mixers, phantom poer, etc.?

Not that I know of. But you can get a mixer and a mic for a descent amount of money. It seems to me you almost always get what you pay for if you do you research. If you pay $100 bucks for a condenser mic. And what ever amout for a mixer. Depending on your playing ability you will get that amount of quality recording. The stuff you hear on a CD is recorded with $1500 dollar mics hence the professional quality. This stuff doesn't go bad in 6 months either. You could technically keep your equipment for the rest of your life. In my case I suck so bad at music and my guitar is so shitty that I can't justify myself in buying professional recording gear. So I stick with the PC mic and Windows sound recorder. Where as if I had nice Martin and I had been playing for a couple years I think definately consider it. Think of it this way Playing Ability->good guitar->good mic->good amp mixer etc. If you don't have any of the things at the begining of the chain all you will end up doing is amplifying/recording mistakes buzzing string or background hiss.
