Hmm...I´ve had some trouble with this song too..
The secret for me, is the beat...
I play it like this..

The letters means how you hit the chord, d=down u=up
The important thing here is to hit the chords upwards on the middle part, when i learned this I solved my muting problem....

As for muting, I still can't use my third finger and I sometimes get a little tone out ouf the muted strings. However, my second finger mutes prety well on its own. So overall its not to bad. Dave will sometimes play the jam while all out strumming, so practice muting wile playing the single notes on the jam, it helped me with muting the verse...

np...btw DVD's are also great investments...the Listener Supported and Folsom Field DVD's have great versions of Stay...
