I've played a few.. the best way to get them is be persistent. I'll be honest, almost every gig I have had is because I know somebody who knows somebody, or know somebody who is helping put on a thing, or whatever.
I'm kind of lazy, so I haven't really gotten around to going to places and trying to push for gigs. The best thing to do (as people have said many times on these boards), is make a demo, and go into places and get the manager or owner or whoever to hear what you have..
The best place to start, though, is local battle of the bands competitions.. almost every city/town has them at some point or another, just check local newspapers and you can usually read about that stuff....
As for set lists? I usually play originals in live shows, but I have played a few cover shows as well..
As for covers I have done...
Watchtower (only Dave song, although we did a version somewhere in between Dave and Jimi..)
Let it Be
Brian Wilson
Fireworks
Sunday Bloody Sunday
El Scorcho
Another Brick In the Wall
Steal My Kisses
Burn One Down
Drive
Hey Hey My My
and once we covered a song by a local band.. that was funny s*it..

I think it is important to mix in a song or two that most will know and be able to sing along with, with some originals... those shows usually have the best impact (unless you are able to jam out some of the covers, and catch the crowd with your technical skills).
