how much would it cost to have a luthier carve and fit a nut and saddle for me? (I've already paid for the bone nut and saddle blank)

Any guitar in any price range will benefit from having a properly filed and installed nut and saddle. You'll notice differences in tone and definetly in your tuning. Your guitar will stay in tune better and with a hard material like bone it will sound bigger and most likely brighter. You should call as many guitar shops in your area as you can and ask them for price quotes to see what the average is. Then make your decision based on the reputation of the shop and word of mouth from other players. Don't be afraid to go in and check out the shops for yourself... if it looks like a nice place and the staff are kind and helpful then that's probably a good choice. However, if the staff are snobby and uninterested in your questions or problems... then take your business elsewhere. Courtesy counts and is usually a good indication of how much time and care they'll take with your baby.

i did it myself and it wasn't that hard just using some sand paper and a file. shoot if you got access to dad's tools then you got it made. all you gotta do is fashion it off what the current saddle and nut look like. it took about two hours to do and all i had was a peice of sand paper and a file.
but either way, i've made it a point of replacing the saddle and nut first thing when i get a guitar. and i would recommend that to anyone.

thanks der-ak and grock. I dont think I have a sak big enough to attempt it myself though.
I have already done the calling around part and gotten quotes anywhere from 40-90 bucks. While talking to some of them, some recommended using micarta for the nut and bone for the saddle or vis versa, I can't remember...
Their reason was for sound purposes and cost(micarta comes in pre-cut blanks and all that would have to be done is fitting it to my guitar)
You guys have any experience w/ that?
