I found that Lynyrd Skynyrd - Free Bird was really easy for me to learn with a slide, it was the first song that I learned how to played with a slide. It's not that terribly difficult, there's my suggestion ;-)

Boot Hill by Stevie Ray Vaughn has a cool opening slide thing, and various other parts during the song, not too difficult either.

there are a couple of STP songs that use slides. Really good tunes. That guy is a helluva guitarist so you may not want to start with that stuff.

You want a fun effect, try using a slide and a whammy pedal together. Whew. Sounds like something from outerspace.
Forget about the reasons and the treasons we are seeking
Forget about the notion that our emotions can be swept away, kept at bay
Forget about being guilty, we are innocent instead
For soon we will all find our lives swept away

Find a tab of the opening slide solo from Pink Floyd's "Breathe," off of Dark Side of the Moon. There's a cool solo. If you find a friend to play rhythm guitar (it's really simple chords), it makes a nice coffehouse piece.
