what are the recordings from the band's ear pieces called?
Are they worth getting and where would I go to get them?

They are called IEM recordings (IEM stands for In Ear Monitors). The band is VERY much against recording their IEM's as they view this as an invasion of their privacy....they can and do talk back and forth to each other through them during the concert.
As far as quality is concerned, I do not really prefer them...they sound too "tinny" to me. But they are interesting to listen to what they say..or what the sound men are saying to them.

Yes, there are some DVD's that use an IEM/audio mix for the sound....usually it is done not for the band members conversation, but because the IEM's were needed to improve the sound (the available audio recordings may have been less than desireable in places).
