its a type of body style...

dreadnought is the most common shape of acoustic guitars... but there are a few other ones: there is auditorium (really rounded), jumbo (really big), and classical. each has a slightly different sound (like a jumbo for instance is a lot louder because it has a bigger body), and certain people like the way certain shapes sound, i for one especially like how auditoriums sound :)

Also, I believe Orchestral models are the same body design as auditoriums.

The definition of dreadnought is "full-sized".

You'll also hear talk of 'Concert' models and 'Parlor' guitars. Both are smaller bodied guitars that fingerstyle players dig.
