also instead of learning so much of other peoples songs, learn theory, and jazz, and write stuff. Jazz especially is a good idea.

iron and wine and nick drake are great choices in the singer songwriter vein.
check out wilco, willy mason, damien rice, devendra banhart, dispatch, elliot smith, keller williams, m ward, pete yorn, ray lamontagne, simon and garfunkel, bob dylan.
alot of dylan's stuff might be simple, but there is some pretty good guitar playing on some of it. check out "in my time of dying" and "dont think twice its alright"

Elliott Smith is a really good suggestion. Outstanding writer, both music and lyrics, and had some real fingerpicking and rhythmic chops.
