Every Rose Has It's Thorn by Poison is pretty damn easy, it's just G Cadd9 with a D chucked in there sometimes...

a lot of stuff by Sublime, like Boss DJ, and Rivers of Babylon, What I got, are easy.
Also, the tuning for Trey Anastio's Inlaw Josie Wails is interesting, and it's a little hard at first, but once you get it, it's really impressive.
Try
American Pie- John McClaine (I can't spell, i know).
Let's Go Dancing- Keller Williams did a cover of this Drivin n' crying song
Blackbird- Beatles, but Phish and lots other have done covers
Anything by the Grateful Dead, and Phish can be dummy-downed to still sound awesome. try:
GD's Box of Rain(first song I mastered), Friend of the Devil, Uncle John's Band, Sugar Magnolia
Phish's- Bouncing Around the Room, Prince Caspian

Dispatch also caters a wide list of easy, well known songs: Big Band, Two Coins...ect.
