but does anyone know what that black thing is in dave's sound hole in all his guitars (this can be seen on the RCMH DVD)

It's a feedback buster. Cuts down on the feedback that an acoustic guitar sends through an amp, and also helps to keep picks from falling into the guitar.

It also makes it so that none of the sound from the guitar goes to the vocal mic; it all goes to the guitar amp. On the downside, the guitar sounds less natural as the sound is completely created by the vibrations of the guitar and none by the actual sound produced by the guitar.

A guitar produces audible noise regardless of if its soundhole is covered or not. There WILL WILL WILL be bleed into the vocal microphone. You cannot stop it. Guitar makes sound. Microphone picks up sound. Microphone picks up guitar sound. With vocal sound.
The soundhole is a serious feedback issue. The rubber stop in it helps cut down on it when using the guitar's pickup. Having played with one of these, the acoustic sound is only cut a very little bit. The tone is sharply different, but the guitar is not markedly quieter.
^^ to add on to what was just said, most of the sound of a guitar comes from the soundboard (top), specifically the butt of the guitar. The sound hole is there to allow more vibration from the top and to reverberate the strings more directly from the back. This is why the bridge and saddle or generally placed right in the middle of the soundboard, so that the sound will resonate all throughout the entire guitar.
